Giant Blueberry Pancake

- 3/4 cups all-purpose flour
- 2 tablespoons confectioners' sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon Kosher salt
- 1/2 cup whole milk
- 1 Zest and juice of 1 lemon
- 1 egg yolk
- 2 large egg whites
- Nonstick cooking spray
- 1/2 cup fresh blueberries
- 1/2 cup 1/2 cup maple syrup
- Whipped cream, as desired
Utensils
- Medium Bowl
- Hand Mixer

Step 1
To install the grill grate, slide it into the front of the base so it hooks in, then press down on the back until it clicks into place. Install griddle on top of grill grate so it sits flat. Select BBQ GRIDDLE, set temperature to 350°F, and set time to 15 minutes. Close the hood and press the dial to begin preheating (preheating will take approximately 10 minutes).

Step 2
Combine all dry ingredients in a medium bowl and mix to combine. In a separate medium bowl, add milk, lemon juice and zest, and egg yolk. Mix until combined. Add the wet ingredients to the dry ingredients and mix until well-combined.

In another medium bowl, beat egg whites with a hand or stand mixer until medium peaks form. Then fold the eggs whites into the batter until combined.

When unit beeps to signal it has preheated, open hood and lightly spray griddle with nonstick cooking spray. Pour all the pancake batter on the griddle. Use a rubber spatula to evenly spread the batter across the griddle. Leave hood open. Cook for 10 minutes, flipping halfway through.

When cooking is complete, remove pancake from griddle. Add blueberries and maple syrup to griddle and cook for about 5 minutes, until blueberries turn dark blue. Pour the maple blueberry sauce over the pancake and top with whipped cream, if desired.
